1 cup frozen peas
1 cup zucchini, cubed
½ tbsp. butter
½ tbsp. extra virgin olive oil
1 tbsp. white onion, chopped
1 clove garlic
1-piece bay leaf
¼ cup vegetable or chicken broth
Mint leaves, chopped
Directions:Using the cooking jar, fill water up to Level 3. Pour it into the water tank.
Place the peas, zucchini, onions, bay leaf, garlic, olive oil and butter into the steaming basket, and start the cooking cycle.
Once the cooking cycle is done, take out the bay leaf and discard. Transfer the remaining vegetables into the cooking jar with the cooking liquid. Add in the broth. Cover with mixing lid. Blend until desired consistency.
Pour the soup into a bowl and top with a dollop of sour cream and garnish with mint leaves.
If cooking for adults, you may season with salt and pepper accordingly, in Step 3.
